Steeped Tea Chili in a Jar

Topped with Cornbread

Ingredients

  • 2 teaspoons oil
  • 1 pound lean ground beef
  • 1 cup chopped onion
  • 1 clove garlic, minced
  • 1 large can tomatoes (28 ounces)
  • 1 can (15 ounces) small red beans, with liquid
  • ½ teaspoon ground cumin
  • 1 to 2 teaspoons Steeped Tea Ol' SmokTea Seasoning
  • ½ teaspoon salt
  • 1/8 teaspoon pepper
  • 2 cups yellow cornmeal
  • 1 teaspoon salt
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • 1 cup buttermilk
  • 2 eggs
  • 1 cup creamed corn
  • 1/3 cup grated onion
  • 2 medium jalapenos, finely diced
  • 1 cup shredded sharp cheddar cheese

Directions

  1. In a medium bowl mix together cornmeal, salt, baking powder and baking soda.
  2. In a Dutch oven or large saucepan brown ground beef with onions in hot oil.
  3. Add the garlic the last few minutes
  4. Drain off excess fat.
  5. Add remaining ingredients; bring to a simmer.
  6. Cover and simmer over low heat for 1½ to 2 hours.
  7. In a medium bowl mix together cornmeal, salt, baking powder and baking soda.
  8. In a large bowl mix together the buttermilk, eggs, creamed corn, onion and jalapenos.
  9. Once combined, add the dry ingredients to the wet mixture and stir.
  10. Fold in cheese.
  11. Fill wide mouth Mason jar with a cup of Steeped Tea Chili (warm or room temperature).
  12. Scoop ? cup plus one tablespoon of cornbread batter on top of chili.
  13. Bake for 20-25 minutes.
  14. Make sure to cool jars completely before putting on lid.
  15. Refrigerate.
