  • 2 packages Tonia's Perfect Scone Mix (one for fire, one for ice)
  • 1 1/2 cup fresh blueberries
  • 1 1/2 cup fresh raspberries
  • 8 tbsp cold butter (4 for fire, 4 for ice)
  • 4 eggs (2 for fire, 2 for ice)
  • 1 cup whipping cream (1/2 for fire, 1/2 for ice)
  • 4 tsp sugar (2 for fire, 2 for ice)
  • 2 tbsp all-purpose flour (1 for fire, 1 for ice)
  • 1 tbsp red liquid food colouring (for fire)
  • 1 tbsp blue liquid food colouring (for ice)

  1. Preheat oven to 400 degrees F (200 degrees Celsius)
  2. For each batch, in a large bowl, cut the butter into the scone mix until the mixture resembles coarse cornmeal. Create well in center of blended mixture.
  3. For each batch, separate one egg and reserve the egg white.
  4. For each batch, in a small bowl, combine the egg yolk with the remaining egg and the whipping cream using a fork.
  5. For each batch, pour into well and mix until the dough comes clean from the sides of the bowl.
  6. Add red food colour to the fire batch, and blue to the ice batch. Mix with gloved hands (create a marble look).
  7. For each batch, add raspberries (for fire) and blueberries (for ice) and gather dough into a ball, turn out onto a lightly floured surface and knead 3 times.
  8. For each batch, roll dough into 1/2" thick round and cut into 12 wedges.
  9. For each batch, arrange on an ungreased baking sheet 1" apart. Brush tops with reserved egg white and sprinkle with sugar.
  10. For each batch, bake in preheated oven for 15 minutes or until light and fluffy.
