Matcha Raspberry Oat Muffins

Ingredients

  • 2 cups rolled oats
  • 2 bananas
  • 2 eggs
  • 1 cup plain Greek yogurt
  • 3 tbsp maple syrup
  • 2 tbsp matcha (we used Vanilla Matcha)
  • 1.5 tsp baking soda
  • .5 tsp pure vanilla extract
  • dash of salt
  • 1 cup raspberries (fresh or frozen works fine)

Directions

  1. Preheat oven to 400F.
  2. Add all ingredients to a blender in order given (save a few raspberries for the tops of the muffins!). Blend until smooth.
  3. Line 12 muffin cups and distribute the batter. Add the rest of your raspberries on top of the batter and bake for about 15 minutes.
  4. Let rest for a few minutes while the muffins cool. Enjoy!
