This No-Bake Matcha Energy Bites recipe is easy to make, full of feel-good ingredients, and irresistibly delicious! Store leftover energy bites in an airtight container in the refrigerator for up to 2 weeks or freeze for up to 3 months.
⅓ cup sticky liquid sweetener of choice (honey or maple syrup)
1 tsp pure vanilla extract
¼ tsp kosher salt
1 tsp Sipology's Sweet Chocolate Chip Cake Matcha (or your Sweet Matcha flavor of preference!)
½ cup Optional mix-ins: cocoa powder (as seen in photo for this recipe!), chocolate chips, peanuts, pecans, dried cranberries, etc.
Directions
Place all of the ingredients in a large mixing bowl. Stir to combine. If the mixture seems too wet, add a bit more oats. If it’s too dry, add a bit more nut butter. It should resemble a somewhat sticky dough that holds together when lightly squeezed.
Place the bowl in the refrigerator for 30 minutes to set.
Remove the bowl from the refrigerator and portion the dough into approximately 1" balls.
Optional: roll the balls in some matcha for extra matcha flavor!
